BURGER BUNS

RECIPE FROM ALEX GOH - AND I NEVER FAILED. THANKS SIR

BURGER BUNS - ALEX GOH

(A)
400G BREAD FLOUR
20G SUGAR
6G SALT
1 TBSP MILK POWDER
2 TSP INSTANT YEAST

(B) 250ML WATER
( C ) 30G SHORTENING

METHOD

1. MIX (A) TILL WELL BLENDED. ADD (B) AND KNEAD TO FORM A DOUGH

2. ADD (C ) AND KNEAD TO FORM A SMOOTH DOUGH.
LET IT PROVE FOR 45 MINUTES OR TILL IT DOUBLES IN SIZE.

3. DIVIDE THE DOUGH INTO 80G PORTIONS, MOULD INTO BALLS AND PUT IN A GREASED PAN. LET THEM PROVE FOR 12 - 15 MINUTES THEN FLATTEN SLIGHTLY AND CONTINUE TO LET THEM PROVE FOR 30 MINUTES

4. BRUSH WITH WATER AND SPRINKLE SOME SESAME SEEDS ON TOP. BAKE AT 190C FOR 15 MINUTES. WHEN COOKED GLAZE WITH BUTTER.

400G TEPUNG ROTI ( HIGH PROTEIN FLOUR)
20G GULA
6G GARAM
1 SUDU BESAR TEPUNG SUSU
2 SUDU KECIL YIS SEGERA

(B)
250 ML AIR

(C )
30G LELEMAK SAYURAN


1. ADUN (A) SEHINGGA SEBATI. CAMPUR (B) DAN ULI SEHINGGA MENJADI DOH

2. TAMBAH (C ) DAN ULI DOH SEHINGGA LEMBUT

3. BIAR IA NAIK SELAMA 45 MINIT ATAU BERGANDA SAIZNYA

4. BAHAGIKAN DOH MENJADI 80G SEBAHAGIAN. BENTUKKAN MENJADI BEBOLA DAN GRISKAN DULANG PEMBAKAR. BIARKAN IA MENAIK SELAMA 15 MINIT. KEMUDIAN RATAKAN SEDIKIT DAN BIARKAN IA MENAIK SELAMA 30 MINIT.

5. SAPU DENGAN AIR DAN TABUR SEDIKIT BIJIRAN KE PERMUKAAN.

6. BAKAR PADA SUHU 190C SELAMA 12-15 MINIT. SETELAH MASAK GLAZE KAN DENGAN BUTTER DI PERMUKAAN ROTI KETIKA MASIH PANAS.
