JUS SENJA NAN MERAH

JUICE SENJA NAN MERAH ~  amboiiii kan main lah nama juice makcik nih..bukan merah sangat pon. ala ala merah pepel

kaler nya nampak cantik kan..sedap juga lah. boleh masuk anak tekak makcik

ada beetroot, celery, carrot, lemon dan bawang putih serta halia. cam nak masak sayur jer makcik ini tetapi yang sebenarnya makcik menjuice kan semua benda ini. ohh...no..bawang putih..yuck yuck yuck..but garlic is the best untuk cure penyakit kita.

please read pasal raw fruit juice atau juicing vegetable. sememang nya kita sekarang perlu menukar cara permakanan kita. bukan secara drastik tapi cukup lah sekadar membalance kan makanan proses yang kita ambil selama hidup kita. Untuk menghindari penyakit penyakit kronik didalam organ tubuh badan kita. better late then never. :)

PULUT PERIUK KERA

Peringatan untuk yang nak bertandang ke Serikin @ kuching. makcik nampak ramai orang kita selamba jer duduk di warung warung dan membeli makanan di kawasan tersebut. Buat pengetahuan kawasan tersebut kebanyakan nya di huni oleh orang kristian dan sudah tentulah makanan mereka terdiri dari makanan yang tidak dapat kita makan. pendek kata di ragui kehalalan nya. Jadi kalau nak pergi sebaik nya kita bawa bekalan makanan sendiri . Di situ juga lah terkenal dengan nasi didalam periuk kera. ada nasi pulut yang di kukus plain dan juga di kukus dengan sambal udang. di jual dengan harga seringgit atau 2 ringgit..memang mengamit selera nak nak time dah tengahari . tapi tolong lah ia..kalau teringin nak makan biar lah kita membuat nya sendiri...atau pun suruh lah geng geng di kuching memasak untuk kita  :)

Nak di jadi kan rezeki makcik..Kebetulan sewaktu pergi ke serikin last month makcik terjumpa penduduk di situ menjual produk hutan, salah satu darinya adalah periuk kera . apalagi makcik borong lah semua nya. yalah kan dalam semua tu ada juga yang tak boleh di guna pakai, ada juga yang terkoyak.
lepas cuci berus dalam luar dan buang apa yang patut begini lah periuk kera kita.

Cara makcik :~

PULUT - anggaran 2 kg
Di cuci bersih dan di toskan (boleh di rendam dengan 1/2 hiris asam keping selama 1  jam jika suka) - bergantung dengan berapa banyak periuk kera kita ada.

udang kering - 350gm di rendam dan di kisar halus
ayam cincang - 450gm di cuci dan di toskan
halia - 2 inci - diblend halus
serai - 1 batang - hiris halus dan kemudian di blend bersama halia
bawang merah - 10 ulas -di blend halus
bawang putih - 5 ulas - di blend halus

santan pekat - 3 kilo - di campur dengan 1/2 gelas air dan sedikit garam. kalau tak nak letak air dan garam pun tak apa.

dengan sedikit minyak tumiskan bawangan dan halia/seria blend sehingga naik bau dan garing, masukkan ayam cincang kedalam bahan gorengan , kacau sehingga garing. masukkan udang kering. gaul lagi dan masukkan garam  dan perisa stok ayam jika suka. (lebih kan garam kerana adunan ini akan dicampurkan dengan beras pulut.
apabila adunan ayam kita sudah sebati. gaul kan dengan pulut yang telah kita tos . gaul sebati

masukkan sesudu atau sesudu setengah makan beras pulut kedalam periuk kera yang telah kita cuci bersih. pastikan beri ruang untuk beras pulut kita mengembang. jangan penuh kan semua ruang dalam periuk kera itu kerana akan menyebabkan santan kita melimpah keluar. selesai semua pulut di masukkan dalam periuk kera, tuang kan santan pekat kedalam periuk kera.

begini lah rupanya pulut periuk kera kita yang hendak di kukus. kukuslah selama 1/2 jam atau 45minit atau sehingga masak.
malangnya gambar selepas masak terlupa nak snap. yang penting nya pulut ini memang sedap . boleh di buat time ada majlis keraian.. tapi bukan senang kan nak dapat periuk kera ini.

PAVLOVA COKLAT

Pavlova yang di ingin kan ketika hati sedang gundah gulana. combination dari rasa manis dan coklat buat pavlova ini menjadi seimbang. try lah. oh ya try lah experiment pavlova dengan yogurt. bagi makcik rasa itu lebih sedap dari  menikmati pavlova dengan whipping cream.

BAHAN-BAHANNYA :-)
4 putih telur ( telur gred A)
1  cawan gula halus (mat cedok keluar 2 camca teh) - makcik guna 80gm gula castor yang dikisar halus
1 camca besar tepung jagung
1 camca teh cuka makan
1 camca teh esen vanilla
3/4 cawan non-dairy whipping cream, putar hingga kembang

Buah2an segar seperti stroberi, kiwi, peach, anggur, blueberry, raspberry dan mangga

1 1/2 sudu serbuk koko - ayak (makcik tambah)

CARA MEMBUATNYA :-)
Panaskan oven pada suhu 180C, buat satu bulatan berukuran 9 inci pada kertas minyak. Kemudian terbalikkan kertas tadi dan alas kan pada  loyang pembakar (gunakan bayang bulatan tadi sebagai ukuran pavlova nanti). Ketepikan.

Putar putih telur hingga berbuih, guna kelajuan tinggi, masukkan gula halus sedikit demi sedikit hingga habis dan terus putar hingga menjadi meringue yang kental dan berkilat.

Masuk tepung jagung dan serbuk koko, kacau rata dengan spatula. Masukkan esen vanilla dan cuka makan, gaul rata. Tuang atas kertas minyak tadi dan bentukkan seperti lingkaran pada kertas tadi. Bentukkan bulat dan tinggi sedikit, tak perlu kemas2 sangat.

Turun suhu oven pada 130C dan bakar pavlova selama 1 jam 20 minit, mat guna api atas dan bawah. Bila pavlova nampak pucat dan sedikit perang, matikan api oven, renggangkan sedikit pintunya dan biar pavlova sejuk sendiri dalam oven. Bila sejuk, berhati2, alihkan pavlova tadi ke dalam pinggan sesuai.

Putar non-dairy whipping cream hingga kembang dan kental (pastikan ia sejuk). Kemudian tuang dan ratakan atas pavlova tadi. Hias dengan buah2 segar seperti dalam gambar, hidangkan dan simpan dalam peti sejuk jika tidah habis dimakan..

apabila sudah lama mencicip pavlova dengan whipping cream makcik cuba experiment kan dengan menuang yogurt diatas pavlova. hasil nya sangat marbeles. kombinasi manis dan masam. sedap dohh

DETOX JUICE

sejak dua menjak ini my kaum kerabat - saudara dekat dan jauh banyak yang meninggal kerana kanser. samada kanser tulang , hati , atau pun rahim. Minta di jauh dari kita yang sihat ini.  Makcik lihat di akhir hayat mereka macam mana mereka berjuang dalam kesakitan dan akhir nya pasrah dan redha dengan ketentuan ALLAH.
Kata orang jagalah permakananan sebab dari permakanan kita lah timbulnya pelbagai macam penyakit yang kita sendiri tidak sedar sudah bertengek didalam badan kita. Elak kan gorengan, french fries memang sedap tapi antara sedar dan tidak kita hanya makan minyak yang terkandung didalam nya. Masak lemak cili api pun sangat sedap atau jika pekena sup segala macam sup memang buat kita bertambah tambah nasi nya. pendek kata bayangkan saluran paip di dapur kita yang penuh dengan kotoran dan lemak..mungkin begitu lah benda didalam usus kita.
beberapa hari yang lalu makcik surf net tentang juice yang berkhasiat, meski pun sebelum ini makcik memang sangat suka kan juice buah buatan sendiri tetapi rupanya pengambilan juice dari exstrak buah saja tidak elok untuk kita apalagi jika kandungan gula didalam buah itu tinggi. jadi kena balance dengan pengambilan juice yang lain. alternatif nya adalah jus sayur.

SUP BELUT

Dah lama mencari belut. kebetulan sangat ketika bukan misi mencari  terjumpa orang menjual belut di pasar tamu di miri. RM50.00 sekilo, sangat mahal tetapi sebab dah teringin kan beli lah 2 kg. Dari KK makcik mencari belut rupanya tah macam mana terjumpa orang menjual belut hidup di Miri, tersesat mungkin tapi kata si penjual itu belut ini datang nya dari sungai di bahagian sri aman. Jauh juga lah pejalanan belut ini kan.. patut lah harga nya sebegini mahal. nak di jadi kan cerita, makcik bernasib baik sebab tukang jual sanggup menyiang sekali ikan belut ini. melihat belut yang ala ala benda yang panjang itu tak sanggup makcik nak memegang nya ketika hidup. Misi teringin dan teruja nak makan belut ini kerana dillah teringin sangat nak merasa sup belut. Takut plak budak tu kempunan, nanti menyesal plak makcik kalau terjadi apa apa. Minta dijauh malaikat 44.

Ini soup belut yang dah siap makcik renih. senang  jer makcik membuat nya. masukkan kedalam periuk nasi (makcik suka masak sup didalam periuk nasi sebab rasanya lebih enak dan daging nya masak lembut, try lah masak soup ayam atau kaki ayam.. oh ya..makcik suka soup kaki ayam..rasa lembut nya agak berlainan dengan kalau kita masak dengan cara biasa - tak rugi membeli extra periuk nasi untuk memasak soup disamping memudahkan cara kita memasak ia nya juga sangat sedap)
oh ya didalam soup ini makcik letak bawang putih, merah , serai dan halia. extra halia untuk rasa yang pedas,  Yang penting didalam soup ini adalah air dari belut itu sendiri, sangat bagus untuk badan  kita. kemudian tabur lah apa apa saja yang kita suka didalam soup kita tadi. sedap u.

nah..ini lah dia selepas abis sampah sarap masuk perut...lastly kita nikmati isi belut itu sendiri. kalau terjumpa kat pasar, why not give a try, sangat bagus untuk kesihatan

DURIAN CREPE

semampu mungkin makcik cuba singgah di sini , busy mengalahkan bini pm. ah yang sebenarnya makcik ni sibuk berkejar kesana kemari untuk tuntutan kehidupan harian. makcik baru balik dari tahlil arwah hari ketujuh cousin makcik , Arwah shamsiah meninggal hari sabtu lepas 1 june 2013 akibat sakit kanser rahim. 8 bulan selepas kematian ayah dia dan 16 bulan selepas kematian adik perempuan dia. satu peristiwa berturut2 yang berlaku didalam keluarga. last week sebelum makcik pergi ke kl makcik sempat melawat dia pada hari sabtu ketika dia ditahan di hospital. melihat dia yang dari gebu menjadi hanya tinggal tulang buat makcik mengalir airmata. shamsiah hanya berumur 34 tahun. suffered from ovary cancer 2 tahun lepas. after di diagnosed dengan kidney problem, 5 tahun dia suffered sehingga seluruh ahli keluarga redha dia pergi dari dia menanggung kesakitan yang tak tertahan. seminggu sebelum kematian nya dia hanya bergantung dengan morfin untuk mereda kan kesakitan yang di alami nya akibat kanser yang telah merebak ke seluruh organ dalaman nya. Setia di samping suami yang sanggup mengambil cuti tanpa gaji untuk menemani sang isteri bila doktor mengesahkan arwah tidak ada harapan dengan tanda chop stage 4B. Hari ini dia tinggalkan seorang anak lelaki yang berumur 14 tahun untuk menemani keluarga yang telah di tinggalkan nya. Al-fatihah buat Shamsiah Haji Saat. semoga tenang di sana

Melihat kan saat terakhir arwah makcik baru terfikir bahawa amat penting bagi kita untuk menjaga permakanan kita. Mula hari ini marilah kita sayangi badan kita. Dan pelan pelan menjauhi makanan segera.
secara perlahan balik ke basic, seperti datuk nenek moyang kita yang tidak pernah terkena penyakit sebegini.  fikir lah walaupun sejenak..demi kesihatan kita sendiri.

crepe di bawah ini telah lama makcik buat, baru hari ini ada kesempatan menepek nya. ada beberapa lagi hasil kerja airtangan makcik yang belum makcik updatekan, selepas itu mungkin makcik beralih kepada permakanan sihat sahaja. In sya allah.

mari kita tengok resipi kali ini. untuk kali ini makcik guna kan resipi dari sheila of spices journey. makcik sukakan texture crepe ini kerana ianya sangat lembut dan sangat sedap di tekak makcik. jom skodeng!

Crepe Durian 7 Jenis Tepung    Credit kepada : Sheila: Spices Journey

Bahan-bahan:
3 sudu besar tepung Hong Kong
3 sudu besar tepung naik sendiri
2 sudu besar tepung ubi kayu
2 sudu besar tepung kastard
2 sudu besar tepung jagung
2 sudu besar tepung kentang
2 sudu besar tepung Super Fine
2 sudu besar gula icing 2 biji telur - buang tali pusat
1/2 tin susu cair - atau  gunakan santan kelapa
1 sudu kecil garam halus
3 sudu besar mentega yang dicairkan
2 cawan air 3 helai daun pandan - atau gunakan 1 sudu teh esen vanilla
sedikit pewarna hijau & kuning -
bahagikan adunan kepada 2 bahagian untuk warna hijau dan kuning. 

Cara:
1. Satukan semua bahan dan kacau sebati dengan menggunakan whisker.
2. Simpan dalam peti sejuk selama 1 jam. Keluarkan dan kacau rata.
3. Panaskan sebentar kuali non-stick menggunakan api paling perlahan.
4. Masukkan adunan ke dalam kuali dan lenggangkan kuali supaya adunan tidak terlalu tebal atau terlalu nipis sehingga adunan likat dan biarkan hingga atasnya masak.
5. Tidak perlu terbalikkan crepe sewaktu mengangkat dari kuali.
6. Ulangi sehingga adunan habis dan biarkan crepe sejuk sebentar. Sheila menggunakan kuali berukuran anggaran 20cm dan memperolehi lebih 20 keping crepe.

kita sediakan intinya pula. Oleh kerana whipping cream yang  di gunakan sudah cukup manis (walaupun arahan di luar mengatakan boleh tambah gula jika mahu), kita tidak mahu tambah apa-apa lagi. Untuk memudahkan kerja, putar sahaja whipping cream sampai kental! photo P4130231_zpsff783d94.jpg

Sebelum itu lenyek isi durian mengikut tahap kehancuran yang disukai. Okey... kulit crepe sudah sejuk,
 isi durian sudah dilenyek semangkuk, whipping cream pun sudah mengental,
marilah kita teruskan acara membalut melipat pula. Mula-mula, bentangkan crepe dengan sempurna, jangan ada yang terlipat-lipat. Kemudian ambil sesudu kecil krim kental (kalau nak banyak bubuhlah satu sudu besar), kemudian letakkan isi durian dan tutup kembali atas isi durian tadi dengan krim. Tarik crepe dari kiri ke kanan, dan dari kanan ke kiri sehingga menutupi, dan lipat bahagian atas serta bawah crepe.

Proses terakhir... terbalikkan Crepe Durian 7 Jenis Tepung tadi. Hasilnya seperti di bawah ini... dan juga yang di atas tu.... Jangan lupa, untuk rasa yang lebih enak, simpan dalam peti sejuk semalaman sebelum dinikmati
